| Executive Chef 1 (Exempt) System ID: 13001 Location: US-IL-Chicago Position Title: Executive Chef 1 (Exempt) Relocation: No Category: Culinary Type: Full-Time More information about this job: Unit Description: Sodexo is seeking for TRAVELING Executive Chef / Certified Executive Chef / CEC / Chef supporting Midwest / Chicago, IL geography for Senior Dining, but could on occasion support any state within the US as assigned. The Executive Chef / Chef will be responsible in managing the daily operations of the kitchen area, implement production process, menu planning, catering, manage food cost / labor cost and have overall understanding of HACCP. The Executive Chef will oversee menu development for all dining areas, and provide train/mentor the sous chef/cooks and utility staff. Reporting to the General Manager, the ideal candidate for this position will have experience supervising and supporting production functions of kitchen employees, ability to motivate employees to continually improve performance, follow/ direct HACCP / Food Safety / Physical Safety Programs, and manage cost controls. Experience in health care /hospitals / retirement community / country club /fine dining is preferred. Flexibility in traveling and scheduling is a must - willing and able to travel to various facilities as needed. Position is a full-time management position with benefits. Position Summary: Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a small account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position. Qualifications & Requirements: Basic Education Requirement - Technical, Trade, or Vocational School Degree Basic Management Experience - 1 year Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc. Sodexo will require a background check and may require a drug screen for this position.
